Food Preparation and Nutrition Learning Tasks for Years 9 and 10

Summer Term 2020

 

 

For this half term I have set a range of separate weekly tasks that link in with our syllabus.  There is a mixture of theory and practical elements so I hope you enjoy the variety!

 

Written work should ideally be typed up using Microsoft Word.  However, if you are unable to access this at home please hand write the work and if possible email me a photograph.  I have uploaded the worksheets for each week to SharePoint https://eggbuckland.sharepoint.com/Technology/SitePages/Home.aspx and I will also email you the one you need for the week in advance.  Don’t forget to email me photos from practical tasks.

Week Beginning - 13th July

What I will be learning about - 

Nutrition

What I will need to know or be able to do by the end of the week

  1. By the end of this week you should understand the concept of macro and micro nutrients, why we need Protein, Carbohydrate and Fats in our diet and the different types available and the functions of each in our diet.

  2. Complete the tasks set on the Nutrition worksheet on SharePoint.

Food Miles Organic Food

  1. Understand the terms ‘organic’ and ‘food miles’

  2. Using the Organic section of the worksheet complete tasks 1-6

  3. Complete the write a letter to your local MP task.

  4. Using the food miles section of the worksheet complete tasks 1- 8 and

  5. Create a food miles label

Week Beginning - 29th June

What I will be learning about - 

Flapjacks Practical Task

What I will need to know or be able to do by the end of the week

  1. Create a fact sheet on nuts and seeds.

  2. Include information on the different types of nuts and seeds available, their health benefits and uses in cooking.  Why are nuts dangerous to eat for some people?

  3. Use the nuts and seeds PowerPoint and digital text book to research the topic.

  4. Practical Task – using nuts and seeds produce a granola bar. 

  5. (Do not use nuts if anyone in your family is allergic to them!)

Week Beginning - 15th June

What I will be learning about - 

Egg Practical Task

What I will need to know or be able to do by the end of the week

  1. Understand eggs as a commodity

  2. Research into the 8 different functions of eggs highlighted in the slide below.  Give a definition and example for each.

  4. What other information can you find about eggs?  What different types are available? how are they stored? what are their nutritional value? How can they be cooked?

  5. Brief: You have one hour to prepare a sweet or savoury dish using eggs.

  6. Select basic recipes which are achievable in an hour, consider the presentation and how you will plate your dishes.  Don’t forget to email a photo to your teacher

Week Beginning - 8th June

What I will be learning about - 

Kitchen Workplace Safety

Food Poisoning

What I will need to know or be able to do by the end of the week

  1. Develop a greater knowledge of kitchen safety and food poisoning prevention.

  2. Using the kitchen workplace safety complete tasks 1 – 8 and produce a health and safety leaflet.

  3. Complete tasks 1-9 on the food poisoning section of the worksheet

Week Beginning - 1st June

What I will be learning about - 

Knife Skills - Learning and revising 6 different chopping techniques

What I will need to know or be able to do by the end of the week

  1. Be able to incorporate advanced knife skills into practical dishes.

  2. Using any spare vegetables or fruit at home, master the 6 chopping techniques that professional chefs use.

  3. Firstly, watch the knife skills video and then have a go at home.  Don’t forget to photograph your work and remember to take care when using knives (bridge and claw hold)

  4. Using the chopping techniques produce a dish of your choice.  I have included a sweet chilli noodle recipe on the PowerPoint but you could choose something different depending on what you have at home, for example a soup– just remember to include the chopping techniques! 

  5. Please email me your photograph of your knife skills and dish that you create.

Week Beginning - 18th May

  • Evaluation

What I will need to know or be able to do by the end of the week

  1. Write an evaluation using the information in the help guide.  Don’t forget to include photos of your practical work.  Remember to talk about what went well as well as how you could improve.

Week Beginning - 11th May

What I will be learning about - 

  • Time plan

  • Cook dish 3

What I will need to know or be able to do by the end of the week

  1. Write your time plan using the information in the help guide to assist you.  Complete your time plan with all three dishes on it and pretend you are going to follow it in a 3 hour exam so that you can practice dove tailing (sequencing your work to make best use of your time) If you struggle to do this colour your recipes 3 different colours with a coloured pencil – cut up the stages and then put them into a logical order. Don’t forget to include your 30 minute mise-en-place time at the beginning.

  2. Cook Dish 3 and photograph your work to inset in the evaluation section.  Be safe – let an adult know you are cooking and get support if needed.

  1. Write up your recipe trial from your practical session.  Include your photograph

  2. Select your 3 recipes you will be making as part of the NEA work 

  3. Complete your shopping list for all 3 dishes using the booklet to help you with the layout 

  4. Cook Dish 1 and photograph your work to insert in the evaluation section.  Be safe – let an adult know you are cooking and get support if needed.

to guide you (however due to the current situation I will overlook low skilled dishes if that’s all you have at home! Be creative!!!)

Week Beginning - 20th April

What I will be learning about - 

  • Research

 

  • Research write up and analysis

 

  • Recipe Trial

What I will need to know or be able to do by the end of the week

  1. Complete 4 different types of research around your brief (Healthy, family cooking on a budget) For example, you could research cooking on a budget using the internet or a magazine.  You could design a questionnaire to give to your family to find out what types of meals they like to eat and you could research the term ‘healthy’ – refer to the Eatwell guide -what does this mean in relation to the task?

  2. Summarise your research findings

  3. Select and cook one relevant recipe to trial – don’t forget to photograph it to include in your work.

Your recipe for your trial can come from your research, a family favourite you cook at home or a dish you have made in school previously.  Please choose something you already have ingredients for at home if possible so that you can avoid going out to the shops.  Email me if you would like me to send you a specific school recipe – lhunt@eggbuckland.com – remember the theme is healthy, family cooking on a budget!

  1. Read the NEA2 help guide so that you know what you will need to complete for your project over the next half term.

  2. Write out the brief 

  3. Write a small introduction to the task

  4. Complete a plan of action using the examples given in the booklet.  Your plan can be presented either as a mindmap or table.
